BAKE THE EGGPLANT IN A PREHEATED 350 DEGREE OVEN FOR TWENTY  MINUTES

USE A JARRED SAUCE OR MAKE YOUR OWN

DIP THE BAKED EGGPLANT IN THE TOMATO SAUCE

NOTE THE MANHATTAN DISHWARE


COVER  A LAYER OF SAUCED EGGPLANT WITH SHREDDED (OR SLICES) OF MOZZARELLA CHEESE
PUT A LAYER OF SAUCED EGGPLANT IN THE BAKING DISH  FIRST
CONTINUE SEVERAL LAYERS OF EGGPLANT AND SHREDDED MOZZARELLA


CHEF BOYLANO'S WIFE KEEPS HIM CHAINED TO THE STOVE WHEN HE'S COOKING.  OTHERWISE HE DOZES OFF OR GETS DISTRACTED BY GOLF OR BASEBALL ON TV


CHEF BOUNCING BILL IS A CONSERVATIVE BUT IS LIBERAL WITH SAUCE  (GRAVY AS WE SAY IN NY)  AND CHEESE

BAKE AT 350 DEGREES FOR TWENTY  MINUTES

OPEN THE OVEN AFTER 20 MINUTES

CHEF BOYLANO HAS A NICE SALAD OF GREENS (NEVER ICEBERG LETTUCE),TOMATOES,GREEN AND YELLOW PEPPERS AND CARDINI'S CAESAR DRESSING  (NOT NAMED AFTER  JULIUS OR AUGUSTUS BUT CARDINI HIMSELF)

BE SURE TO ADD PARMESAN CHEESE ON TOP BEFORE BAKING FIVE MORE MINUTES.  THE TOTAL BAKING TIME IS 45 MINUTES.
